Fredrika Runeberg originally baked it for her husband, Johan Ludvig Runeberg. According to the story, she created the recipe using ingredients she had at home – a few leftover gingerbread cookies and breadcrumbs. Johan is rumored to have added a splash of punch when enjoying it for breakfast!
Our Runeberg cake contains chopped almonds, orange zest, and breadcrumbs made from our own sourdough bread. The cake is soaked in a sugar syrup flavored with dark rum, punch, and lemon, then topped with our house-made raspberry jam.
Runeberg Day is on February 5th, but we’ve already started baking! Every day, up until February 5th, we bake a batch for our outlets. If you need a larger quantity, feel free to pre-order through our webshop.
